
Sassy Crab & Kale Pasta
When I buy crab it’s always fresh and wild caught lump crabmeat. I usually buy it in a large container so I can make two meals out of it.
1-2 cups of fresh lump crabmeat
½ bag of fresh kale (spinach)
2 tablespoons of olive oil
2 tablespoons of fresh minced garlic
½ cup of chopped red onion
½ fresh squeezed lemon
1 tablespoon of butter
3-4 second pour of red wine vinegar
½ jar of your favorite spaghetti sauce
1 tablespoon of Big Momma’s Magic Spice Blend (Feisty)
Heat up your skillet on medium high for about 5 minutes before adding the oil, butter, garlic, oil. Stir for a couple of minutes then add crabmeat and squeeze lemon. Continue stirring. Add red wine vinegar, spaghetti sauce and kale. Stir completely for about 2 minutes and cover on medium heat. Stir every few minutes making sure it not sticking. Then turn heat down to a low medium for about 10-15 minutes then turn off still covered. When boiling your favorite pasta always first boil water before adding pasta. Always check your pasta while cooking it. I usually cook pasta for 5-6 minutes on boil then turn off heat and let pasta stand in the hot water, stirring every minute or so. About 5-10 minutes later pasta should be perfect but always check it’s tenderness. Plate and serve. Voilá Sassy Crab & Kale Pasta
